Kangkung Tofu Cinta Berahi

Hah..kengkawan, nama masakan kita hari ni memang kelas gitu. This is my hubby's favourite vegie dish, why? He said the taste is nice. The result after eating this..lies in the name. Hahaha..Anyway, this dish is best eaten immediately after preparation. May I suggest enjoying this with slightly buttered steamed white rice and tamarind fried chicken wings. I tell you, that's my hubby's perfect lunch treat. :)

Ingredients:

1 bundle (1 kg) of Kankung (Convolvulus) - cleaned and cut
3-4 bird's eye chillies - halved
4-5 tablespoons of chopped garlic
Oyster Sauce (as desired)
Fermented Tofu (from China, comes in red coloured glass jar)
Half glass of water

Method:

Heat 2 tablespoons of cooking oil in a wok. Then throw in the garlic and chillies, sautee till fragrant.

Add in oyster sauce (about 2 tablespoons) and 2 tablespoons of the fremented tofu. Stir fry for few seconds before adding water. Let it simmer. Turn the heat on high.

Less than a minute later, put in the cut kangkung and another 2 tablespoons of the fermented tofu. Mix them well for 1 minute. Do not overcook the kangkung.

Remove from the wok. Ready to serve with buttered white rice and tamarind fried chicken wings.

P/S: Perfect for lunch on a sunny day. Chilled lemonade or simply 'ice limau' goes well with this dish. Happy cooking!

Apple Crumble


The apple dessert to die for. I used to bake 3 trays of this dish and all licin! Tastes like apple pie but minus the kneading of the pastry, so simple. There is no exact measurement for the ingredients, the magic is that you can modify the sugar or butter to your desire.

Ingredients:
4 cups peeled, cored, sliced apples (Granny Smiths apples are the best)
1/4 cup water

1 teaspoon of lemon juice
3/4 cup all-purpose flour
1 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup softened butter (at room temperature)


Preparation:
Combine apples, cinnamon, 2 tablespoons of sugar, lemon juice and water in a pot. Cook until the apples soften a bit. Remove to cool.

For the buttery crumble, cut in butter to the flour until resembles crumbs. Add in salt and sugar. Mix well.

Grease the baking dish (10 x 6 or 9 inch dish). Spread some crumble as the first layer. Then topped with some apple mixture. Repeat this until you have the crumble as the final layer.

Bake in the oven for 45 minutes (or until the crumble is golden and crisps) at 300F. Oh yes, heat the oven beforehand.

Now you are ready to enjoy it warm with vanilla ice-cream..yummy!

Cheesy Chicken & Rice Casserole


This is one of the easiest chicken and rice recipe that I have ever tried, but the taste is heavenly. You can prepare this dish and pop it in the oven and forget about it until it is done. Thus, you have no reason not to give it a try..good luck!

1 can (10 3/4 oz.) Campbell's Cream of Chicken Soup
1 1/3 cups water
3/4 cup uncooked long-grain white rice
2 cups fresh or frozen vegetables
1/2 tsp onion powder (but I would prefer fresh onions)
4 skinless, boneless chicken breast halves
1/2 cup Cheddar cheese

Method:
1. Stir soup, water, rice, vegetables and onions in 12" x 8" shallow baking dish.

2. Top with chicken. Season chicken as desired. Cover.

3. Bake at 375F. For 45 min. or until done. Top with cheese. Makes 4 servings.

Note: You may use quick-cooking brown rice instead of white rice or a mixture of both.
